Lime Gelee 2010-10-01 From: http://www.foodandwine.com/recipes/tangy-strawberry-parfait-with-lime-gelee Recipe by: Daniel Boulud For serving with Avocado Ice Cream, double the recipe from above. 2 tsp Gelatin, unflavored 2 Tbs Water, cold 1/2 C sugar 4 Tbs water 1/2 C Lime Juice, fresh 1 tsp Lime Zest, finely grated In a small cup, sprinkle the gelatin over cold Water and let stand until softened, about 3 minutes. Fill a medium bowl half full of ice water. In a small saucepan, combine the Sugar with 4 tablespoons of water and simmer over moderate heat just until the sugar is dissolved. Remove the sugar syrup from the heat and whisk in the softened gelatin until dissolved. Stir in the lime juice and lime zest. Set the saucepan in the ice water bath and stir the gelée until cooled. Pour the gelée into the chilled glasses and freeze until firm, about 15 minutes.
