Clootie Dumpling From: Margaret Gray, Aisby 1 Lb Plain Flour 2 oz Breadcrumbs 1/2 Lb Currants 1/2 Lb Suet 1 tsp Baking Soda 1 tsp Mixed Spice 1 tsp Salt 6 oz Sugar 1/2 Lb Sultanas 1 Tbs Syrup 1 Tbs Treacle 1 tsp Cinnamon 1 tsp Ginger 1 Egg Milk to mix Put all ingredients in bowl and mix to soft consistency with Milk and Egg mixture. Wring out cloth in very hot water and cover with flour. Tie up leaving enough room for expansion (not too much). Boil for 4 hours. (Water must always boil and add only boiling water.)
