Buy yourself an Atlas pasta machine, the one with the handle, not the electric ones (no fun!). Throw the following into a food processor: 2 cups bread flour 1 cup semolina flour (any italian grocery) 4 eggs 1 tbsp olive oil 1 tsp salt 1/3 cup water Process until a ball forms. Dump onto a bed of flour and knead for just a few minutes. Cover with plastic wrap and let rest for about 1/2 hour. Cut into 8 equal pieces and follow the directions on the pasta machine. I've got this down to such a science, I can have 1 1/2 pounds of pasta made, cooked, and on the table in less than an hour. Once you try this, you'll never use Ipollito's again! When you get the hang of the basics, buy a pasta book and experiment with spinach, beet, and all kinds of colored pastas. Most involve substituting a different ingredient for one or more of the eggs.
