Stir Fried String Beans From Greg Lee Circa 1988 This is also good with Asparagus, but will take a bit longer to cook. 1 pound String Beans 2 clove Garlic, minced 1/4 Cup Oil 1 dash Salt 2 Tb Sherry 2+ Chinese Chili, ground, or hot pepper flakes, to taste 1 tsp Sugar 1/2 Tb cornstarch 2 Tbs Soy sauce 1/2 Cup Chicken Stock Heat pan, add Oil and Salt. Lower heat, add Galic, fry until light brown. Add beans and pepper, turn heat to high. Stir-fry until beans change to deeper green. Add Sherry. Cook covered 2-3 minutes until crunchy-tender. Remove cover; add cornstarch mixture Stir until thickened. Serve.
