Arin's Salmon From: Danuta Otfinofski Date: 2009-01-27 Serves: 4 1 cup Stale Bread, crusts removed, cut into 1-inch cubes 10 cloves Garlic 1/3 cup Wine Vinegar 1 cup Extra Virgin Olive Oil 2 Lb Salmon fillets, cut into 4 8 ounce pieces 3 tbs Vegetable Oil Salt Pepper 1/4 cup Blanched Almonds, toasted until golden brown, roughly chopped 1/4 cup Cumin Seeds, toasted Put bread cubes, garlic, vinegar into food process or blender and puree until smooth. With the motor running, add Olive Oil in stead stream, processing until just incorporated. Season to taste with Salt and Pepper. Rub salmon lightly with oil, sprinkle with salt, pepper. Grill or broil. Remove salmon from grill/oven. In small bowl, combine the almonds and cumin and mix well. Sprinkle this mixture over the salmon, drizzle generously with garlic sauce, serve.
