Strawberry Sorbet 2010-03-17 Chris Shenton Strawberry variations: 2 cups mixture, from McGee's fruit ice numbers: http://www.re.org/eric/fruitices/ STYLE FRUIT SUGAR LEMON WATER (to make 2C) Granita 1 C 7 Tbs 2 Tbs 3/4 Cup Medium Sweet 1 3/4 C 7 Tbs 2 Tbs 2 Tb Sweet 1 1/2 C 11 Tbs 13 Tbs 2 Tb Sweet Water 1 C 12 Tbs 2 Tbs 1/2 Cup Here's what I used this time: 1 2/3 C Strawberry puree (14 ounce frozen package from Columbia) 3 Tbs Lemon juice 7 Tbs Sugar 2 Tbs Water 1 pinch Salt Combine Lemon Juice, Sugar, Water, Salt, heat and dissolve; cool. Add this to thawed Straberry puree. Chill well. Process 20-30 minutes in ice cream maker. Put in container, cover top surface with plastic film, freeze overnight.
