Strawberry Eucalyptus Sorbet 2011-11-18 The fruit pulp from La Fe comes in 14 ounce frozen bags from Latino stores and is very convenient. Just 4 gram Eucalyptus wasn't noticeable. 1/2 C Water 3/8 C Sugar 1/4 tsp Salt 1 whole Lemon, juiced 10 gram Eucalyptus leaves, fresh, chopped 14 ounces Strawberry Pulp Bring Water, Sugar, Salt, Lemon Juice, Eucalyptus to simmer and steep to extract Eucalyptus essense. Add thawed Strawberry. Chill overnight and process. 2011-11-22: Fun -- the eucalyptus hits the nose but you can't really taste it. The strawberry could use a bit of a punch-up perhaps. Check the texture after softening in fridge at serving time. Might benefit from corn syrup to smooth ice crystals. 2011-11-25: Served with carbonated strawberries. We can't taste the eucalyptus but Marisa can; she says she'd like more. It's a bit firm and icey and granita-like so next time add more sugar or syrup.
