Beer Bread -- Archetype Derived from USENET responses Makes 1 loaf 3 C flour regular or with 1 C rye or wholewheat 3 T - 1 C sugar or 1 Tb or more honey or molasses 1 T baking powder 12 oz beer (room temp) light or dark -- hops will come through OPTIONAL 3 T cornmeal 1 T caraway seeds 1 ts oregano 1 ts basil 1 ts thyme 1/2 C cheese (parmesan, ...) 1/4 C melted butter, poured on top of bread dough Preheat oven to 350F. Butter 9x5x3" loaf pan. Sift dry ingredients together. Add beer and any other wet ingredients. Mix well, but not too much or you'll kill all the bubbles; dough/batter should be sticky and lumpy. Turn batter into pan. Bake for 40-60 minutes, until pick comes out clean. Turn out and cool completely on rack before slicing.
