Cornbread, Southern style Serves 6 to 8 Based on: http://home.att.net/~ejlinton/cornbread.html 2007-10-27 1 Tbs Oil 1 Tbs Bacon Fat or similar 2 Eggs, beaten 2 cups Cornmeal, medium grind 4 tsp Baking Powder 2 tsp Salt (1 tsp was too mild) 2 cups Buttermilk 2 Tbs Bacon drippings, melted, or veg. oil Heat convection oven 425 degrees. Grease your 10-inch heavy skillet with Oil and Fat; the oil will keep the fat from burning. Heat pan with fat in oven. Beat eggs in bowl, add Cornmeal, Eggs, Buttermilk, and the melted bacon drippings. Mix well, a whisk works well. Pour into hot skillet; batter will sizzle. Bake at 450 degrees for 35 minutes or until golden brown.
