$Id: meat_sauce_cooks_illustrated,v 1.2 2001/06/04 02:24:42 chris Exp $ Italian Meat Sauce from Cook's Illustrated TV Show "America's Test Kitchen" 1.5 Lbs Country Style Ribs (no bones, plenty of fat) Salt Black Pepper, ground 1 Tbs Olive Oil 1 medium Onion, minced 0.5 Cup Red Wine 28 oz Whole Tomatoes, drained, Juice reserved, chopped fine (1 can) 1 Lbs Pasta Season Meat, brown in Oil for 10-12 minutes. Pour off fat. Saute Onion 2-3 minutes. Add Wine, reduce to glaze, 2 minutes. Add Meat and Tomatoes and Juice, simmer 1.5 - 2 hours; simmer covered 45 minutes, flip the meat and simmer another 45, then remove the lid to reduce the liquid a bit. Shred Meat, season.
